Thursday, Nov 5, 2009 @06:41am CST Key Lime Pie Home Recipe Chef Chadwick Isom Filling: 1 cup egg yolks (about 16-20 yolks) 2 cans (14 oz each) condensed milk 1 cup Key lime juice Crust 2 1/2 cups graham cracker crumbs 1/2 cup granulated sugar 6 oz. melter butter 1/2 tsp salt Crust mixing (1st step) 1. Mix together graham cracker crumbs, salt and sugar 2. Mix in butter 3. Pat crust into two pie tins Filling mixing (2nd step) 1. Mix condensed milk and egg yolks 2. Mix in key lime juice 3. Pour mix into crust and let settle Bake 15-20 minutes at 350 degrees or until firm in the middle Let cool for 20 minutes, then refrigerate Top with whipped cream Whipped Cream: 2 cups heavy cream 1/2 cup powdered sugar 1/2 tsp vanilla Combine the cream and vanilla in a mixing bowl Use a wire whip to beat the whip cream into soft peaks Sift in the powdered sugar and whip until peaks stiffen |
