Marinade 1 cup vegetable oil 1/2 cup diced onion 2 T. coarse chopped garlic 4 bay leaves crumbled 1 T. thyme 1 T. rosemary 1/2 cup fresh parsley Mix all of the ingredients together and marinate meat over night. Inside a zip lock bag will keep the marinade covering all the surface of the meat. Cooking Instructions Cover the rack bones with foil to protect them from burning, salt and pepper the rack. Heat a sauté pan up until very hot. Place a small amount of the marinade oil in the pan like 2 T. Sauté the lamb on both sides browning very well. Put the pan in a preheated oven at 350 for 8 -15 minutes depending on how done you like the lamb. Use a meat thermometer to determine doneness. 120 for rare, 130 for medium rare, and 140 for medium. |
